Blueberry Pancakes
An easy quick filling breakie and great way to use up ripe bananas

Instructions
  1. Blend the bananas, eggs, oats and pinch of salt together until smooth.
  2. Heat 1/2 teaspoon of butter in a frying pan over a medium heat. Pour the batter mix into the pan to make approximately a 10cm pancake in diameter and 1cm thick. Scatter a few berries on the pancakes and flip pancakes when bubbles appear. Cook until both sides are golden brown in colour.
  3. Repeat until all mixture is used up. Serve with yogurt and sprinle with blueberries and nuts.
