Ingredients

cous cous

feta cheese

ml
vegetable stock

spring onions
1
red pepper

cucumber

pesto

tbsp
pine nuts
Instructions
In a bowl, put a vegetable stock cube in 200ml of boiling water and add the cous cous, leave for 10 mins.
Slice the spring peppers and onions and cut the cucumber into 1cm cubes. Add them to the couscous and mix through the pesto and serve.
Top with crumbles feta and pine nuts
