Ingredients
400
gram
chickpeas in water
drained
3
tbsp
olive oil
2
red onions
sliced and diced

tin
chopped tomatoes
600
ml
vegetable stock
1
tbsp
ground tumeric
1
tbsp
ground cumin
1
tbsp
ground ginger
1/2
tbsp
ground cinnamon
150
grams
quinoa
1
bag
spinach
1
handful
corriander
1
garlic cloves
Instructions
Heat oil in a large pan
Add onion, garlic and spices until onion is soft
Add chopped tomatoes, chickpeas and stock to pan and simmer for 20mins
Cook quinoa as per instructions (normally quinoa needs washing and boiling for 15/18 mins)
7mins before chickpeas and other ingredients are done, add the bag of spinach and heat until spinach has wilted
stir quinoa into pan Serve dressed with coriander
