Moroccan chickpea and ginoa stew
A really delicious, healthy, nutritious and warming stew. A vegetarian meal, packed with goodness that will easily fill you up.

  1. Heat oil in a large pan
  2. Add onion, garlic and spices until onion is soft
  3. Add chopped tomatoes, chickpeas and stock to pan and simmer for 20mins
  4. Cook quinoa as per instructions (normally quinoa needs washing and boiling for 15/18 mins)
  5. 7mins before chickpeas and other ingredients are done, add the bag of spinach and heat until spinach has wilted
  6. stir quinoa into pan Serve dressed with coriander
