Ingredients

mushrooms

g
butter

shallot finely chopped
1
tbsp
fresh chopped coriander
2
slices of preferred bread
2
tbsp
ricotta
1
pinch
of salt and pepper
Instructions
Melt the butter in a frying pan and cook the shallot over a medium heat for 3 minutes till softened.
Add the mushrooms, season and fry for 6 minutes-8 minutes until cooked through, then add the parsley.
Toast the bread, spread with ricotta and top with the mushrooms, salt, pepper and coriander
