Prawn & Mango Noodles

Ingredients

instant rice noodles

cooked prawns
1
carrot cut into matchsticks (don’t peel)

limes (juice)

tbsp
fish sauce
1
red chilli deseeded and sliced
1
handful of coriander roughly chopped
1
handful of mint leaves roughly chopped

mango chunks

crushed peanuts
Instructions
Put the noodles in a saucepan and cover with boiling water and leave to stand for 3 mins or per instructions.
Chop carrots into matchsticks. Drain in a sieve and pour into a serving bowl and add the carrot.
In a small bowl add the lime juice, fish sauce, chilli and herbs. Pour half the dressing over the noodles.
Put the mango and prawns on top and drizzle with the rest of the dressing and crushed peanuts.
