Put the couscous in a bowl and pour over 100ml boiling water. Cover and leave for 5 mins.
Put the dressing ingredients in a blender with 5tbsp of cold water with blitz till smooth. season with salt and pepper. Divide the dressing between the 2 jars and layer in the remaining ingredients putting the couscous in the centre
Seal and keep in the fridge till ready to eat, then shake the jars up and serve in bowls.
