Instructions
  1. Microwave the rice as directed for 2 mins.
  2. Heat a frying pan with oil on a medium heat. Crack the eggs into the pan and stir whilst cooking. Remove from the pan into a bowl once cooked through.
  3. Add vegetable stock, vegetables and soy sauce to the pan and bring to the boil. Stir in the rice, cover and take off the heat and let it stand for 5 mins. Stir in the eggs and serve.
