Boil a saucepan of water, when boiled add the rice and a pinch of salt. Put the lid on, turn the heat down and leave to simmer for 10 mins.
Peel and chop the onion and garlic. Deseed the chilli and chop finely, thinly chop the spring onion, trim the beans and chop into thirds.
Stir fry the beans in a splash of hot oil for 5 mins and transfer to a plate. In the same pan add a splash of oil if needed and cook the mince until browned.
Add the onion, garlic, spring onion and as much chilli as desired for another 5 mins. Add the green beans, soy sauce and ketchup Manis and stir together.
Serve the rice, top with the pork stir fry and sprinkle with roughly chopped coriander.
