Chicken And Rice Salad Caribbean Style
  1. Heat the oven to 180 degrees and boil a saucepan of water.
  2. Coat the chicken breasts with Jerk seasoning, spray a baking tray with low cal cooking spray or use greaseproof paper. Squeeze the juice of half the lime over the chicken and put in the oven to cook for 15mins until the chicken is cooked through.
  3. Put the rice in the boiling water and add turmeric and thyme. turn the heat down to simmer for 12 mins. Chop the pepper into 1cm cubes, slice the spring onions. When the rice is done drain and stir in the pepper, spring onion, sweetcorn and rocket, squeeze over the remaining lime juice.
  4. Serve and slice the chicken breast and lay it on top of the rice and add a slice of lime.
