Chicken Couscous

Instructions
  1. Boil water in the kettle and put 240ml of boiling water in a measuring jug, add the chicken stock cube and the couscous. Cover and leave for 10mins.
  2. Heat the oil in a frying pan and add the chicken for about 10mins until cooked through.
  3. Whilst the chicken is cooking, peel, halve and thinly slice the shallot. Trim the courgette and cut into 1cm cubes. Remove the chicken from the pan when it is cooked and put the frying pan back on the heat. Add the courgette and shallot and cook for 4 mins on a medium heat.
  4. Put the chicken back in the pan and mix with the vegetables for another 2 mins. Add the couscous to the chicken and veg with salt and pepper and mix together. Serve and drizzle with yogurt.
