Instructions
- Steam the kale till it wilts for 4 mins. Toast the bread.
- Heat a drizzle of oil in a frying pan, crack the eggs into the pan and stir continuously till the eggs are cooked through.
- Spread the hummus on the toast, layer on the kale, add a squeeze of lime and then the scrambled eggs. Serve with salt and pepper.
