This is a quick to make but needs freezing time. Great for a sweet treat or instead of a pudding
  1. Slice the cucumber lengthways and remove the seeds with a teaspoon.
  2. Grate the cucumber and sprinkle with 1/2 tsp of salt and put aside for 10mins. Squeeze any more liquid out of the cucumber with the back of a wooden spoon.
  3. In a bowl combine and mix the yogurt, lemon juice, garlic, mint, cucumber and black pepper.
