Ingredients
- 6 pork sausages
- 2 pak choi
- 2 spring onions
- 2x300 g packs of straight to wok udon noodles
- vegetable oil
- 2 tbsp tahini
- 2 tbsp dark soy sauce
- 1 tsp five spice powder
- 2-4 tbsp chilli oil (use as much as you can cope with!)

- Heat some oil in a frying pan and squeeze the sausages out of their skins and into the pan. Add the five spice and salt and pepper. Fry for 5 min, stirring occasionally to break up the meat.
- Chop off the white stems of the pak choi and separate leaves. Finely slice the spring onions. Mix together the tahini, soy sauce, and chilli oil with 2 tbsp of hot water. Add the noodles and pak choi to the sausage meat and toss together for 1 minute.
- Pour in the sauce and serve with a sprinkling of spring onions
