Instructions
  1. Melt the butter in a frying pan and cook the shallot over a medium heat for 3 minutes till softened.
  2. Add the mushrooms, season and fry for 6 minutes-8 minutes until cooked through, then add the parsley.
  3. Toast the bread, spread with ricotta and top with the mushrooms, salt, pepper and coriander
