- 300 g mushrooms
- 10 g butter
- 1 shallot finely chopped
- 1 tbsp fresh chopped coriander
- 2 slices of preferred bread
- 2 tbsp ricotta
- 1 pinch of salt and pepper

Instructions
- Melt the butter in a frying pan and cook the shallot over a medium heat for 3 minutes till softened.
- Add the mushrooms, season and fry for 6 minutes-8 minutes until cooked through, then add the parsley.
- Toast the bread, spread with ricotta and top with the mushrooms, salt, pepper and coriander
