Instructions
- Put the noodles in a saucepan and cover with boiling water and leave to stand for 3 mins or per instructions.
- Chop carrots into matchsticks. Drain in a sieve and pour into a serving bowl and add the carrot.
- In a small bowl add the lime juice, fish sauce, chilli and herbs. Pour half the dressing over the noodles.
- Put the mango and prawns on top and drizzle with the rest of the dressing and crushed peanuts.
