- 100 g cous cous
- 50 g feta cheese
- 200 ml vegetable stock
- 2 spring onions
- 1 red pepper
- 1/2 cucumber
- 2 tbsp pesto
- 2 tbsp pine nuts

Instructions
- In a bowl, put a vegetable stock cube in 200ml of boiling water and add the cous cous, leave for 10 mins.
- Slice the spring peppers and onions and cut the cucumber into 1cm cubes. Add them to the couscous and mix through the pesto and serve.
- Top with crumbles feta and pine nuts
