Ingredients
- 400 gram chickpeas in water drained
- 3 tbsp olive oil
- 2 red onions sliced and diced
- 1 tin chopped tomatoes
- 600 ml vegetable stock
- 1 tbsp ground tumeric
- 1 tbsp ground cumin
- 1 tbsp ground ginger
- 1/2 tbsp ground cinnamon
- 150 grams quinoa
- 1 bag spinach
- 1 handful corriander
- 1 garlic cloves

Instructions
- Heat oil in a large pan
- Add onion, garlic and spices until onion is soft
- Add chopped tomatoes, chickpeas and stock to pan and simmer for 20mins
- Cook quinoa as per instructions (normally quinoa needs washing and boiling for 15/18 mins)
- 7mins before chickpeas and other ingredients are done, add the bag of spinach and heat until spinach has wilted
- stir quinoa into pan Serve dressed with coriander
