Prawn & Mango Noodles
This dinner is fresh and tasty with amazing textures and Asian flavours.
  1. Put the noodles in a saucepan and cover with boiling water and leave to stand for 3 mins or per instructions.
  2. Chop carrots into matchsticks. Drain in a sieve and pour into a serving bowl and add the carrot.
  3. In a small bowl add the lime juice, fish sauce, chilli and herbs. Pour half the dressing over the noodles.
  4. Put the mango and prawns on top and drizzle with the rest of the dressing and crushed peanuts.
