Instructions
- Microwave the rice as directed for 2 mins.
- Heat a frying pan with oil on a medium heat. Crack the eggs into the pan and stir whilst cooking. Remove from the pan into a bowl once cooked through.
- Add vegetable stock, vegetables and soy sauce to the pan and bring to the boil. Stir in the rice, cover and take off the heat and let it stand for 5 mins. Stir in the eggs and serve.
