Yogi Granola Bar

This could be made for breakfast or for a desert.

It is so versatile in flavours, you can use what ever takes your fancy that day and can be dairy free if you want it to be.

Granola base
  1. Put greaseproof paper in a shallow pan suitable for the freezer
  2. Put granola in blender and blend it till smooth
  3. Mix the granola and coconut oil together
  4. Press granola mix evenly into the pan and smooth down to make the base layer. Put in the freezer for 5-10mins to set
Topping
  1. In a bowl mix the yogurt and protein powder
  2. Pour the mixture onto the frozen granola base
  3. Add the toppings of your choice
  4. Freeze overnight (or for a minimum of 2 hours)
  5. Remove from freezer at least 15mins before eating so it can defrost a bit first
  6. Cut into slices and enjoy
